Ingredients
  • a few tomatoes
  • 1/2medium onionyellow or sweet
  • 6cloves garlicYou may need to adjust this down if you aren’t a crazy Italian like me
  • 1T dried oregano
  • to taste Salt
  • to taste black pepper
  • to taste cuminbeware, cumin is VERY strong, this is easily omitted
  • 2 limes juiced
  • Wateroptional, I include this in all salsa to thin to desired consistency if needed
Instructions
  1. Start by quartering and coring a couple large tomatoes. Chop half a yellow or sweet onion into some large chunks. Crush a few(half dozen) cloves of garlic.
  2. Char/roast to your liking
  3. Blend that shit I use a blendtec, that bitch will blend ANYTHING Pulse it until chunky and taste.
  4. Add oregano, salt, pepper, cumin, paprika, garlic, etc until you are happy. Juice a lime or two into it until you’re happy with the acidity and pulse a few more times until uniform Mexican salsa consistency is achieved.
