Everyone loves chips and salsa. You’re an asshole if you don’t and you should leave my site immediately if you feel that way. Just kidding… don’t leave…. NO REALLY, GET OUT!
Fresh salsa seems daunting until you make it for the first time and realize it is SO FUCKING EASY and you are an idiot for buying it all this time. After your first successful homemade salsa you will NEVER buy pre-made again. It is cheap, easy and unbelievably delicious. I highly recommend making a double or triple batch of relatively plain salsa, separating it into several half batches and trying out new flavor combos. You could whip up a a half dozen salsas for a taco/nacho bar in minutes if you start with a good base and customize from there.
I love deep smokey flavors and prefer to roast and char my salsa ingredients on the grill or in a pan.
Start by husking and halving a couple large tomatoes. Chop half a yellow or sweet onion into some large chunks. Crush a few(half dozen) cloves of garlic.
Char/roast to your liking

I use a blendtec, that bitch will blend ANYTHING
Pulse it until chunky and taste.
Add oregano, salt, pepper, cumin, paprika, garlic, etc until you are happy. Juice a lime or two into it until you’re happy with the acidity and pulse a few more times until uniform Mexican salsa consistency is achieved.
Try your masterpiece with some tortilla chips to confirm your greatness and quell your hunger until the rest of your meal is completo.
