Homemade Corn Tortillas

All of my friends know I am a taco fanatic and I am somewhat of a tortilla snob as well. Flour tortillas typically have no place in my taco world, corn or bust! I stand by the classic Mexican street taco practice of grill warmed, double stacked corn tortillas(when using store bought tortillas). When I am making tacos at home I almost always make my own tortillas. Homemade corn tortillas are thicker and do not need to be doubled. You only need a few ingredients and they cook in minutes. You’ll never want to use store bought tortillas again.

Tortilla making often puts me in a zen-like state. It is a great repetitive activity to unwind after a long, stressful workday and prepare myself for the massive taco dinner that I am about to eat. It’s one thing to use grocery store tortillas when you’re stuffing them with packet seasoned ground beef but you damn well better do things right when you spend hours making carnitas or braising lengua! You wouldn’t fill a Ferrari up with 87 regular would you?

  1. Add all ingredients to bowl and mix until a loose crumbly dough forms then knead dough until smooth.
  2. Form dough into golf ball sized pieces
  3. Use a tortilla press or the bottom of a heavy dish to flatten your dough balls
  4. Cook your tortillas on a comal or flat pan over medium high to high heat. I usually cook them for about 10 seconds, flip, cook for a minute, flip and then cook another minute. The first 10 seconds help set the dough and hold in some heat when you flip it to cook the first side completely. You'll know they are done when spots start to brown and they smell fantastic.
  5. As you finish cooking the tortillas be sure to put them in a tortilla warmer, towel or just wrap the whole stack in foil. They will steam themselves and stay warm and pliable.
