Hulk Salsa
It’s green, has big flavor and you’ll be really angry if you run out. Hulk salsa is my take on is a popular salsa that you will find on any street taco cart that doesn’t suck and some that do. It’s creamy, smoky, acidic, tangy and has a little kick. For the longest time I thought it was an avocado cream sauce but it is SO much more. I was craving it at home while making some tacos and after a little research I found out that I was looking to make a guacamole taquero. It’s a cross between tomatillo salsa and guac. Does it get any better than that?
Most recipes I found were pretty plain and plain is NOT something I want my food to be. I amp up the flavor by charring the tomatillos, onion, garlic, serrano and jalapeno peppers. Throw it all in a blender until smooth and then add your avocado, lime juice and seasoning. I like my Hulk Salsa to have more of a salsa consistency than a guac consistency so I also thin it out with a little water and stir or re-blend until I am happy.
This sauce is perfect on tacos, nachos, burgers and pretty much anything else. Don’t forget to scrape and lick out the blender but don’t get cut! You do NOT want to waste a drop of this green gold.
Instructions
Throw your serranos, halved tomatillos, whole peeled garlic cloves and onion into a dry pan over medium high heat. Cook them and occasionally rotate until they smell amazing and start to char.
Remove the stem from the serranos and the seeds if desired. Dump your pan of charred ingredients into the blender or food processor and pulse until it looks like salsa.
Add your avocado, lime juice, and seasonings and pulse a few more times until uniform. Taste and adjust seasoning as needed. If the texture is too thick you can add a little water and pulse again. Hulk salsa should be able to flow when you move the blender but it should not be runny.
